Buffalo Grilled Chicken With Blue Cheese Spuds


















Jason LOVES buffalo chicken sandwiches! Im not a HUGE fan but I do like Buffalo wings....compromise = Buffalo Chicken Breasts! HA!  I found a great recipe here with blue cheese potatos!  YUMM! I ONLY ONLY ONLY eat blue cheese dressing with my wings (eww!) so I was a little worried about these potatos..Luckily they were a HIT! Not too powerful but just enough to taste it!

Ingredients:
1 tablespoon cornstarch
1 teaspoon seasoned salt
large zip-top bag
1 1/2 pounds boneless, skinless chicken thighs
1/4 cup Buffalo wing sauce (Store bought or homemade recipe below)

Preheat grill. Place cornstarch and seasoned salt in zip-top bag; shake to mix. Add chicken and wash hands; seal tightly and shake to coat. Add wing sauce; seal tightly and knead bag to coat completely.


Spray both sides of grill with cooking spray. Place chicken on grill, using tongs; close lid and cook 8–10 minutes. Cook until edges are crisp and internal temperature is 170°F. Serve.
Blue Cheese Spuds
 
Ingredients:
4–5 fresh chives
3-4 potatoes, boiled and mashed
3 tbsp Butter
3 tablespoons crumbled blue cheese  (I actually just used Blue cheese dressing)
2 teaspoons cooked, crumbled bacon

Mix all together and serve.

Buffalo Wing Sauce:
1 stick butter
4 tablespoons brown sugar
5 tablespoons tomato sauce
1/4 teaspoon garlic
1/4 teaspoon onion powder
1/4 teaspoon white pepper
1/4 teaspoon chili powder
1/4 teaspoon salt
1 teaspoon oregano, fresh or dried
Dash beer
1 dash hot sauce (recommended: Frank's Hot Sauce)
