Chocolate Rum cake w. Rum Glaze




















Jason LOVES Rum cake and had a craving the other nite so I decided to give it a whirl.  I cheated a little with the cake box but he thought it was great so I say 'why not save a step?' HA!
I have to confess I didnt try it....Im not a huge fan of 'wet' cake so its not really my style but a HIT all the same!

Ingredients
1 cup chopped pecans or chopped walnuts (optional, I didnt use them)
1  package chocolate cake mix (You just make the cake mix as directed)
1 package chocolate instant pudding mix
4 eggs
1/2 cup cold water
1/2 cup cooking oil
1/2 cup rum (I used Bacardi Rum)

Glaze
1/2 cup butter
1/4 cup water
1 cup sugar
1/2 cup amber rum

Sprinkle nuts over bottom of greased 10 inch tube pan or 12 cup bundt pan.
Stir together cake mix, pudding mix, eggs, water, oil and rum.  Pour batter over nuts.
Bake at 325 in oven for 1 hour.    Cool 10 minutes in the pan then invert it onto a plate.

Glaze-
Melt butter in saucepan. Stir in water and sugar and boil 5 minutes, stirring constantly.
Remove from heat. Stir in the rum and pour glaze evenly over top and sides of cake.
Allow cake to absorb glaze. Repeat until glaze is used up.  (It will look like too much BUT ITS NOT)
