Broccoli & Tomato Cream Sauce Pasta
This was one of those nites where I had Chicken in the sink and not a clue what to do with it! We've been trying to eat much healthier, i.e. whole wheat pasta, fresh ingredients, etc. BUT whole wheat pasta ONLY comes in a spaghetti noodle or a penne and THATS IT! B-O-R-I-N-G!!!!!
So last time I went shopping, I threw caution to the wind and loaded up on all the fun pastas, like BOWTIES! YUMMMM!!
Feeling like something creamy and without a recipe I went refrigerator rummaging and this is what I ended up with. I have to say it was DELISH and SUPER FLAVORFUL!!
Ingredients:
1 box of Bowtie Pasta
1 head of fresh broccoli (you can used any veg you want)
1 can diced tomatoes
1 can water (i used the tomato can)
8oz of Garden Vegetable Cream Cheese (I only had 4oz. left but I'd use a full one next time- You can use any flavor)
Complete Seasoning (to taste- its a multi herb with light salt)
1/2 cube chicken bouillon
4-6 chicken breasts
2 tbsp minced garlic
1 cup milk
I always feel like the chicken is WAY more tender if you cook it as a whole and then cut it to add to dish. SO I seasoned and baked my chicken breasts in the oven for 20 min. (a tad underdone). While chicken is baking, boil your pasta and drain.
Saute your broccoli and tomatoes in butter and garlic. Add your water, milk, bouillon cube and your cream cheese. Let it all soften and blend together (soft boil).
Pull out chicken, dice it up and add to your cream sauce. When pasta is done, drain it and add it as well. Toss the mixture until well coated and let it simmer for 5 min. SERVE!
