Machaca Beef
This is my moms recipe. It has lots of fresh ingredients which I LOVE.
Ingredients:
2 lbs roast shredded
1 cup beef broth (saved from cooking the roast)
1 medium onion diced
1 Tbsp chopped garlic
1 sm. can green chilis
3-4 medium tomatoes diced
1/2 bunch cilantro chopped
1 jalapeno chopped (optional)
1 tsp garlic powder
2 tsp chili powder
1 tsp cumin
salt to taste
After your roast is completely cooked and very tender, shred it. Add it back to the pan (or crock pot) with all the ingredients. Cook on low heat for about 40 minutes. Put it in a tortilla with your favorite toppings... cheese, sour cream, salsa, lettuce, tomatoes, etc.
