Spanish Rice
This is Tony's family's recipe. It's a very regular side dish in our house. : )
Ingredients:
1 cup uncooked rice
1 Tbsp. veg. oil
1 8oz can tomato puree
1 1/2 cups water
1/2 chicken bullion cube
1 tsp garlic powder
1/8 tsp pepper
Optional- 1/4 cup chopped green onion, 1/4 cup chopped cilantro
Directions:
Heat oil over medium heat. Add the rice and cook until golden brown. Stir constantly after the first few minutes. Once browned, add the water, tomato puree and seasonings. Bring to a boil, cover and turn the heat to low. Do not stir while it's cooking. Once done, top with green onion and cilantro. (Serves 4)
