Chicken Mole
Browsing through my Woman's Day magazine I saw a yummy looking recipe called Chicken Mole....Apparently its a traditional Mexican dish, who knew! I, personally, didnt find it too "Mexican" but the flavors were still pretty YUMMY!!!
2 tbsp canola oil or vegetable oil
1 medium onion
6 garlic cloves, minced
1 tbsp cocoa powder
1/2 tsp ground cinnamon & red pepper flakes
1/4 tsp ground cloves & black pepper
1 cup smooth almond butter
1 cup canned crushed tomatoes (I used fresh diced tomatoes)
2 cups chicken broth
1/4 tsp salt
1 slice of white bread, cubed small
4-6 chicken breasts
Rice
In a dutch oven, combine oil, onion, garlic, cocoa powder, cinnamon, red pepper flakes, cloves, & black pepper. Saute for 5 minutes.
Add the butter and mix until is melts into the other ingredients. Add tomatoes, broth, salt & bread, and bring it back to a simmer. Cover the pot and cook for 12-15 min or until the chicken is cooked through.
This makes A TON of gravy and is GREAT over rice!!
