No-Bake Granola Bars
These are a HUGE hit in our house! I've made them 5 times in the past month. They make a great breakfast or snack, and best of all- They are EASY!
Ingredients:
2 .5 cups rolled oats
1 cup nuts (I used walnuts and pecans)
1/4 cup shredded coconut
1/2 cup raisins
1/2 cup dried cranberries
6 tablespoons salted butter
3/4 cup brown sugar
1.5 teaspoon cinnamon
6 tablespoons honey
1 tablespoon molasses
Directions:
Toast the oats, nuts and coconut in a pan over med-high heat until fragrant, stir often. Pour into a large bowl and toss with the raisins and cranberries.
In a sauce pan, add the butter, sugar, cinnamon, honey and molasses. Cook over med-high heat until it starts to bubble. Pour over the oats and stir to combined.
Line a 7x11 pan with plastic wrap. Pour mixture into pan and compact it with a spoon. Refrigerate for 30 min, until hard. Keeping them in the fridge is best so that they stay firm.
