Roast Pork W. Maple & Mustard Glaze!!



















THIS WAS DEEEEEEEEEELICIOUS!!!! (As Madison would say!!)
I had a pork roast that I really needed to cook and I am always looking for new roast recipes.. My new tried and true recipe is the Island Spice Porkloin, but since we've had that the last few times, I decided to try something new.  So, I googled some stuff and ended up finding this one, which was amazing!!! 
Im so glad I went out of my porkloin 'box'!  The ingredients are SUPER SIMPLE and packs HUGE flavor!

Ingredients: ( I went a little larger on the measurements, EXCEPT FOR THE SYRUP, because my meat was a little larger)
2 1/2 pounds boneless pork loin roast
1 cup real maple syrup
4 tablespoons prepared Dijon-style mustard
2 1/2 tablespoons cider vinegar
2 1/2 tablespoons soy sauce
salt to taste
ground black pepper to taste

Preheat the oven to 350 degrees.
Stir together the maple syrup, mustard vinegar, soy sauce, salt, and pepper in a small bowl. Place pork roast in a shallow roasting pan. Spread glaze evenly over pork roast.

Roast pork in the preheated oven uncovered, until internal temperature measured with a meat thermometer reaches 160 degrees, about 1 hour. ** MINE WAS ABOUT 1.5 HRS**
Check it every so often and baste it with remaining sauce...
After its been cooking about an hour, pour the remaining sauce into sauce pan and bring to a boil, then simmer so it reduces by about half and thickens up!  Pour over and serve!
