Tomato-Garlic Chicken Pasta!



















This is an adapted recipe from here.  I decided to make it last minute even though it sounded kinda plain to me.  I started with the basic ingredients and just kind of added as I went along.  It turned our SUPER flavorful and had me going back for seconds!!

Ingredients:
4-6 Chicken breasts
Salt And Pepper, to taste
3 Tablespoons Olive Oil
1 Tablespoon Butter
1 can (28 Ounce) Diced Tomatoes
2 Tablespoons (Heaping) Tomato Paste
Fresh Herbs: Basil, Parsley, Sage, Rosemary
8 cloves Garlic
1 box of pasta (Whichever you prefer)
1/2 cup Parmesan Cheese
1/2 cups White Wine (or Red Wine)
1/2 cup Sundried Tomatoes

Season your chicken with your herb mixture and S/P.  Sear the chicken on both sides.   Once chicken is seared, deglaze your pan with the wine.  Scrape all the chicken bits off the bottom of the pan and add the rest of your ingredients.  Simmer for 20 min or until chicken juices run clear.

Serve chicken mixture with sauce over your pasta!
