Honey Lime Chicken























This was a last minute impromptu dinner....One of those..."Crap!! I forgot to take something out....defrosting in the micro...slap some stuff on it" meals!!  WELL...taking all that into account it was TERRIFIC!!!
I searched last min. and found this SUPER simple, SUPER quick recipe with a yummy glaze!!  Made a few tweaks here and there and VIOLA!
It's definitely going on my regular rotation!!

Ingredients:
2 teaspoons Dry Mustard
3 teaspoons Garlic Powder
3 teaspoons Chili Powder
1 teaspoon Ground Cumin
3 teaspoons Paprika
1 teaspoon Salt
½ cups Honey
Juice of 1 Lime
4-6 pieces Chicken Breasts

In a small bowl combine the dry mustard, garlic powder, chili powder, cumin, paprika and salt.

Rinse the chicken thighs and pat dry with paper towels. Trim any excess fat. Roll each piece in the spice mixture to coat well. Lay the spice-coated chicken on the prepared pan.  ( I used a pyrex dish)

Brush the chicken with the honey mixture occasionally, while it bakes....Bake on 350 degrees for 30-35 min until the juices run clear.  Right before its done...turn your oven to broil for 5 min to carmalize the honey on top!
