Chicken Roll Ups














This is another one of those accident meals...i.e. MY FAVE'S!
I had a few ingredients in the fridge that I wanted to use...wasn't exactly sure how to put them all together...Jason is a fan of Chicken Cordon Bleu but me, not so much...I wanted that kinda feel but better, and more fresh! SO this is what we ended up with! The BEST part is that you can pretty much use ANY ingredients you want, whatever tickles your fancy :)

Ingredients:
4-6 Chicken Breasts (pounded semi thin)
Prosciutto
Spinach
2 cloves minced garlic
1 bag of Mozz cheese. (you can use any cheese you like)
Pesto Sauce ( I love Classico Brand)
Toothpicks or cooking string

Pound out your chicken breasts to an even thickness...Nothing crazy, don't go nuts.
Spread your pesto sauce as well as your minced garlic on the breast..Continue with your prosciutto slices, spinach and mozz cheese.  Take one end of your chicken and roll it up to the other end.  Secure it with cooking string or toothpicks.  Do this with the remaining breasts and bake at 350 for 30 min or until the chicken juice runs clear.
