Sausage & Peppers














Costco had some AWESOME looking sweet italian sausage on sale that I had to have!  This is such a simple and FULL OF FLAVOR dish that I just never think to make, alas, here it is!
It was so good, so simple, & so going on my regular rotation :)

Ingredients:
1 yellow onion, minced or cut in slices
2 red peppers, cut in slices
2 yellow peppers, cut in slices
1 dried ancho chile (optional)
Salt and pepper, to taste
2 cloves garlic, minced
8 fresh basil leaves, torn (you can also use dry)
1 teaspoon fresh oregano, minced  (or dry)
2 pounds sweet Italian sausage
2 cups dry red wine
28-ounce can whole tomatoes, crushed by hand (you can also use fresh tom or jarred tomato sauce)
Pasta

Heat your water and boil your pasta.
Saute onions, peppers and chile in olive oil until onions are brown. Add salt and pepper to taste. Stir in garlic and basil. Add oregano. Hold aside.


Slice sausage with very sharp knife. Saute in skillet over medium heat until brown. Add enough wine to cover about 2/3 of the sausage. Add Sauteed vegetables, tomatoes and any liquid. Simmer gently, partially covered, for 20 minutes. Can be served on pasta or with bread.
