Peanut Butter Banana Oatmeal Muffins





















These are so delish!  I was trying to find something to use my very ripe bananas, but didn't want to make banana bread.  I found a recipe, altered it and I have made them a few times.  They are really good! : )

Ingredients:
1½ cups all-purpose flour
1 cup old-fashioned oats
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1 tsp. cinnamon
1/4 tsp. clove
2 tbsp. applesauce
¾ cup light brown sugar
2 large eggs
1 cup mashed banana (about 3 bananas)
6 tbsp. creamy peanut butter
1 cup low-fat milk

Preheat oven to 350 degrees.  Line muffin tins and set aside.  In a medium bowl combined the flour, oats, baking powder, baking soda, salt, cinnamon and clove.  In another medium bowl whisk the applesauce, brown sugar, eggs, banana, peanut butter and milk until well combined.  Add the wet ingredients to the dry and stir until just combined. Evenly distrubute the batter into the muffin tray and bake for 18-20 minutes.  Allow to cool in pan for 5 minutes.  Once cool, you can top with peanut butter, or just eat plain!
