Chicken Pasta in White Wine Garlic Sauce


















I've been consciously trying to feed my family better, healthier foods... Luckily, fatty foods dont cause ME to gain weight but it does to my peeps so why post stuff people feel guilty for eating?  Although, Im the FIRST one to indulge myself, this dish is DELISH! and you wont feel a single bit of guilt :)

Ingredients:
4-6  boneless skinless chicken breasts
1/2 cup water
1 cup dry white wine
1 (14 oz) can diced tomatoes, drained
1/2 cup extra virgin olive oil
1 cup finely chopped white onion
1lb fresh green beans (ends cut)
1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon rosemary
1/2 teaspoon basil
1 bay leaf
2 cloves crushed garlic or minced garlic
1 lb any pasta, I used Penne but you could use anything!
salt and pepper to taste

Saute your green beans in a few tblsp's of butter and minced garlic until half way cooked thru.
Cut chicken breasts into bite-sized pieces and add them to large skillet with water, olive oil, onion, garlic, and spices. Cook until onion is tender.
Add tomatoes, wine, salt/pepper to taste. Reduce heat, cover, and simmer about 15 minutes while preparing pasta, stirring occasionally.
Drain pasta and add it to your skillet to let all the flavors marry for a bit.  You can also just pour the chicken mixture over the pasta if you'd like but I prefer to mix it all up before I serve.
Serve with fresh salad and garlic toast.

I was pretty generous with my spices when I made this dish and usually add a little more than the recipe calls for, but it is quite delicious as written.
