Chicken Mole
























This is a rich and delicious Mexican dish that we have been making for quite some time!  I have changed the recipe a few times, but I think this one is the best!

Ingredients:
4 chicken breast
1 boullion cube
1 small can of red enchilada sauce
2 Tbsp peanut butter
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 to 1 cup reserved chicken broth
salt to taste

Directions:
Place the chicken in a pot and add water just to cover.  Add the boullion and boil until done. Set aside.  In a seperate pan, add the enchilada sauce, peanut butter and seasons.  Cook on medium heat until conbined. Add 1/2 cup of the broth from boiling the chicken. At this point, you can either shred the chicken or leave it whole and add it to the sauce.  Lower to a simmer and to reduce the sauce until it is slightly thickened.  Taste to see if it needs salt, or if it is too rich for you, you can add some more broth.
Serve over white or spanish rice.
